Mainly because it's been sitting on Microsoft's list of Xbox One X Enhanced titles that were in the works since the console debuted. As per the trailer highlighting the enhancements, the update brings "improved skin tone display through Screen-Space Subsurface Scattering and 4K output". Of which we understand the second thing.
Naturally going 4K offers a vast improvement to Resident Evil 7's image quality on the Xbox One, as the previous version or the one running on an Xbox One S only manages to hit a sub-1080p resolution. And looks blurry by comparison.
