Ubisoft have announced Prince of Persia Trilogy, a re-release bundle of the three past titles with a makeover for the HD and 3D era, exclusively for the PlayStation 3.
Prince of Persia® Trilogy will give gamers the opportunity to relive the critically-acclaimed Prince of Persia® trilogy, remixed in high definition graphics and stereoscopic 3D on 3D enabled televisions. Prince of Persia® Trilogy includes the three full-length renown games: Prince of Persia® The Sands of Time, Prince of Persia Warrior Within® and Prince of Persia The Two Thrones® on one unique blu-ray disc.
In addition to high def textures and native 3DTV support, they'll also be adding extra tech such as normal maps and anti-aliasing.

Prince of Persia: Trilogy is expected in only a month's time on November 18th 2010 with an Australian RRP of $69.95.

A screenshot from each remastered title can be found over on this game page.

So I get to play Sands of Time, which I skipped on the PS2, and the upcoming HD version of Beyond Good and Evil on Xbox live means I won't have to mess around to play those classics.
